8oz Spelt wholemeal flour
2 eggs
6oz unrefined sugar
2 tsp baking powder
two tbsp Maca Poswers
A large handlfu of walnuts
2 small cooking apples
One ripe banana
2 tsp chia seeds
Yesterday I was just wanting to use up some cooking apples left over from Christmas one over ripe banana some eggs and looked in the store to find a lot of chia and maca powder and soem spelt organc wholemeal flour.
Instant thought a fruit and nut loaf for a not too sweet treat in this cold snowy weather.
Once the butter and sugar have been creamed in the blender slowly add the beaten eggs; then add the flour and raiisng agent baking powder.
I added the walnuts and chopped apple and mashed banana followed by a splash of almond milk to loosen the consistency
Put in a greased loaf tin and bake at 180.c for 30 mins or till the skewer comes out clean, I covered the top with butter paper for the last 15 mins to stop it over browning.
Serve warm with kefi yoghourt and berries for brunch or cold with butter at teat im or take on a lengthy hike.
The fruit sweetness and keeps it moist and the chia good for blood pressure and fibre digestion..mac powder a source of protein and good for cognition.
